Just add water to our Complete Bread Mix.
Make up instructions:
Premix 1000g, water 650g
Use tempered water to give a final dough temperature of 24-26°C.
Mix ingredients for 12-15 minutes on middle speed on a conventional mixer or 4 minutes slow and 6 minutes fast on a spiral mixer.
Scale dough as required, roll in to balls, rest for 5 mins and prove at 32°C, R.H. 85% for approximately 60 minutes.
Bake at approximately 230°C for 25-30 minutes for 400g or 30-35 minutes for 800g, 12-15 minutes for 70-80g burger buns.
Our 2.5kg pack makes approx. 8 x 400g loaves.
